Rice, Beef, and Mushroom Cassrole (6)
My Grandma was known for speaking her mind. I’m so proud of her for that. She insisted on getting me into the lake at a few months old (picture included) on a tractor inner tube. And when she decided something, that was that. By the way, she would hate how I’ve repeatedly “reduced her to a pronoun.”
Tonight I made a casserole. We’re on a short reign this week, as the rain is coming down and the time got short… Last week at the Oxbow Market we bought a couple pounds of local grass fed ground beef as we were getting bones to make bone broth, to reduce to consommé- because it looked so good. So this week I wanted to use that yummy meat.
One of the reasons, besides getting to eat awesome meals, for this Monday venture is to remember something about my Grandma. Today I’d like to remember her as a fearless lake girl that expected me and all of her children and grandchildren to take life by the cojones. She never let anyone walk away from her without letting them know exactly what she was all about. Excuse my French, but there were no shits given- like ever. There is so much to honor in that way of being.
Maybe the family was just being nice when they said this meal was really good... The stigma of the word “casserole” didn’t hit too hard so I’'ll definitely try a few more, but this dish didn’t hold true to the VG moniker.
Rice, Beef, and Mushroom Cassrole (6)
INGREDIANTS
1½ ground beef, chopped
2 cups mushrooms
½ dry white wine
1 cup uncooked rice
1 envelope beef seasoning
2 tbsp parsley
1 cup sour cream
Directions
Brown 1 lb ground beef and turn into a 2 quart casserole with 1 cup raw rice. Add ¼ cup butter to skillet and saute 2 cups sliced fresh mushrooms. Stir into beef mixture. Combine 2 cups water, ½ cups dry white wine, + envelope beef seasoning for rice. Pour into skillet, stirring until all brown drippings are dissolved. Pour over beef mixture, mixing well. Cover and bake at 350° 40-45 minutes. Just before serving, stir in 2 tablespoons. Shredded parsley and 1 cup sour cream on top.
